I work at a very small church parent's day out program. I mean...SMALL. The great thing about small is, I know all the kids and their parents. I wouldn't have it any other way. Saturday evening I got a phone call regarding one of the boys in our school, Jack. Jack and his family lost their house in a fire Saturday afternoon. It's heartbreaking. His mom, Kelly just had a baby last Friday, so Lane was 8 days old the day of the fire. The family and their four dogs are safe, but now they face the task of rebuilding everything. So, please keep the Dever's in your thoughts and your prayers. A friend has set up a blog to keep everyone informed of what is going on. You can read it here. Meal Planning Monday
I am trying to get back into the groove of things. So far, it isn't going so well. One thing I need to get better about doing is COOKING. I just finished making my menu for the week. I didn't realize it until I was done, but we will be eating a LOT of chicken this week! Oh well...
Monday - Leftover Chicken Pot Pie (I have a job that night at the O'Charley's test kitchen, so I will be eating there and Brian and K will be eating at home.)
Tuesday - Chicken Fried Steak, Mashed Potatoes, & Corn
Wednesday - Spaghetti (this is K's dance night, so I need something easy.)
Thursday - Chicken Strips/Nuggets, homemade fries, fresh fruit
Friday - Chicken Sandwiches, baked beans, fresh fruit
Saturday - Pulled Pork Sandwiches, Chips, mixed veggies
Sunday - Salsa Chicken Rice Casserole, steamed carrots
I also need to get better about breakfast. Since K & I leave for school about 8:15am, we are usually grabbing something to eat on the way out the door. That usually means donuts, toast, granola bars...nothing real healthy. I am going to try something new this week. My goal is to have myself ready by 7am. Get breakfast ready, get K up, feed the two of us, get her dressed adn then head out the door at 8:15. This means my night owl self is going to have to start going to bed early. (I am typing this at 1:04am!) Brian is off on Monday, so K will be staying home from school while I work. Anyway....I am going to add breakfast to my meal planning next week. Even if it is just cereal!
Okay, I am headed to bed.
